LOBSTER CAKE MANTOU BURGER WITH DILL SAUCE

Serves 2 | Prep time: 15 minutes | Cook time: 30 minutes

INGREDIENTS

2 pieces Frozen Chinese Buns (Mantous)

1 box Luke’s Lobster Maine Lobster Cakes

SAUTEED GINGER RED KALE

1 pack Artisan Green’s Red Kale (100g) 

1 knob Minced Ginger

1 tbsp Sesame Oil

Salt (to taste)

DILL SAUCE

3 sprigs Artisan Green’s Dill (stems removed) 

80g Greek Yoghurt

½ Japanese Cucumber (diced)

1 tbsp Lemon Juice

1 tsp Garlic Powder

Salt (to taste)

METHOD

Preheat oven to 180°C and grill the lobster cakes straight from frozen for 25 minutes.

Prepare Sauteed Ginger Red Kale: Heat sesame oil in pan and add minced ginger. Stir fry till fragrant before adding red kale. Season with salt.  

Prepare Dill Sauce: add diced cucumbers, Greek yoghurt, lemon juice, dill, salt and garlic powder into a bowl. Mix well to combine. Place it in the fridge to chill.

Place frozen buns in an air fryer. Brush with oil and cooked at 160°C for 7 minutes till golden brown. 

Assemble the burger in the following order (from base): buns, sauteed ginger red kale, lobster cake, dill sauce, bun. Enjoy!
